Paul Richard "Dick" Hackstedde, 80, passed away on November 10, 2023, in
Medford, Oregon with his family by his side.
Dick was born in Cincinnati, Ohio on November 1st , 1943, to Paul Richard
Hackstedde and Mary Shillito Hackstedde. He remained a lifelong Cincinnati Reds
fan, even though his family relocated to Arcadia, California when he was 5. He
grew up in Arcadia as the oldest of 4 children. Mary (Muffy) Murray, Beatrice
(Bea) Ward and Peter (Pete) Hackstedde. He graduated from Lutheran High
School in 1961, and later graduated from the University of Arizona. He then
returned to the Los Angeles area and lived in Manhattan Beach for over a decade
before he moved to Portland, Oregon. His years at "the Beach" were some of his
fondest memories with many lifelong friends and adventures that made him
smile.
Dick loved the restaurant business, and he spent most of his career working in the
field. It all began in Arcadia, CA where he started out as a dishwasher and
eventually became a short-order cook at the local bowling alley during high
school. He went on to be the executive chef of El Torito in Marina del Rey, opened
a catering business in Manhattan Beach, partnered in the Portland area's first
Arby's franchise, served as a Sous Chef at the prestigious Benson Hotel in Portland
and eventually became a corporate field representative for Subway. Medford was
an emerging market, but he was never able to sell a franchise in the area, so he
took the risk and bought one himself in 1985. He would go on to own and operate
16 stores in Southern Oregon. He treasured the community and the many
wonderful people that became part of the Southern Oregon Subway family.
Dick fell in love with Medford – the weather (he'd lived in Portland for 10 years
and hated the gloom), the landscape and most of all the people. His infectious
smile and genuine kindness endeared him to everyone he met. He wasn't just a
business owner. He became an integral part of the community, generously
donating his time, money and LOTS of sandwiches to numerous causes
throughout the valley. His involvement in organizations like the University Club,
Central Point Rotary, Asante Rogue Regional Hospital, SOU Raider Club, and
Ashland YMCA showcased his commitment to giving back and making a
difference.
Dick met his wife Dixie in Medford, and they were married in 1992 in Victoria,
British Columbia. That same year he adopted their daughter Stephenie
Hackstedde. Dick and Dixie traveled the world together with special friends and
family.
One of Dick's greatest joys was his love of sports. Football, baseball and golf were
on a steady rotation, and he was famous for his encyclopedic knowledge of the
corresponding statistics. He also enjoyed playing golf and living on the Rogue
Valley Country Club golf course. He eagerly anticipated the yearly travels of his
golf group, enjoying the opportunity to explore new courses and spend time with
dear friends.
He will truly be missed by all that knew him and his infectious smile. He is
survived by his wife Dixie, his daughter Stephenie, his sisters Mary and Beatrice,
and his stepson Jeff Hoxsey. His Celebration of Life will take place on June 2, 2024,
from 4-6pm at the Rogue Valley Country Club. All friends are invited to attend the
celebration.
